Death by Chocolate Cookies

I finally baked again, thanks to this year’s longest long weekend!

I named these babies as Death by Chocolate cookies since I used Ghirardelli’s Triple chocolate brownie mix and added a chunck of white chocolate in the middle. These babies turned out to be softer than the usual cookies that I bake, thanks to the brownie mix.

Fortunately, everyone liked them! Guess I’ll be making these babies for a number of times…until my Ghirardelli mix runs out.

Last March 24, I attended a class at Enderun’s weekend workshops, thanks to a deal I got over at Deal Grocer…and I would say that it was all worth it! That’s coming from an aspiring Pastry and Baking student.

The workshop taught us to make their signature dessert – Louis XV.

I know, crappy picture :( Was using my iPod’s camera to capture the dessert.

It was nice to experience a quasi-legit baking class. The Chef who conducted the class went out of her way to also teach us some techniques – like how to whip up the perfect meringue, how to properly make a whipped cream…stuff like those.

So, as I’ve said (was it here or was it on twitter? anyway…), I’ll be saving up for me to be back in a “real” kitchen lab LOL

Be My Valentine Butter Cookies

They were supposed to be sugar cookies but they tasted more of butter….hence the name change :D

It was my first time using cookie cutters and making my own fondant! I had marshmallows in the pantry and voila! Marshmallow Fondant!

It was fairly easy to make…except that kneading them would make your wrists hurt like hell! I separated the whole batch of fondant into two and colored them pink and what looks like a brighter shade of pink. I wanted the other one to turn out to red but alas, it turned into bright pink instead.

Excuse the crappy pictures as I was using my iPod’s camera…I tried using the dSLR but it just won’t capture the baby pinkness of the fondant :D

Freshly Baked: Butterfinger Oatmeal Cookies!

It was a first for me to work with candybars and oatmeal. Good thing it turned out great – not too sweet! :)

Also, it was a first for me to be substituting one of the ingredients, as I just ran out of brown sugar – good thing I have molasses!

I’ll be doing cookies for the meantime to prefect the size of it and my dad prefers cookies over cupcakes, since he can have my cookies for breakfast with coffee.

Milk Chocolate Cupcakes

After baking dozens(!!) of brownies and blondies, it was a relief for me to be baking cupcakes.

I finally got to try one of the many recipes in The Cupcake Diaries by the DC Cupcakes sisters (aka the Georgetown Cupcakes sisters). I decided to try this one since it was the easiest of the bunch (and the ingredients were easily found in our incredibly small pantry).

Baking the cupcakes were easy enough for an amateur baker like me (should I call myself a baker?), but making the frosting was a different story. I still can’t make my frosting stiff enough…it keeps on getting gooey. Anyway, as they say, practice makes perfect :)
